Executive Chef
Nathan Hitchcock
Nathan Hitchcock, originally from Binghamton, NY, graduated from culinary school in Delhi, New York. He then moved to Long Island with his wife and began working as a cook at North Fork Table, where he trained under chefs Stephan Bogardus and Claudia Fleming. Over the years, Nathan advanced, eventually taking on the role of Executive Sous Chef when Chef Stephan.
He now leads the kitchen at The Halyard, focusing on local ingredients and cultivating relationships with farmers and purveyors to offer a seasonally changing menu. Nathan, being gluten- and dairy-intolerant himself, ensures there are always options for guests with dietary restrictions.

George Simone
George Simone joined The Halyard in 2019, while deep in his culinary journey through the Suffolk County Culinary Arts Program. Upon graduating in 2020, he quickly proved his talent and dedication, working under the mentorship of Executive Chef Stephan Bogardus and at the time Sous Chef Nathan Hitchcock. His commitment to excellence and leadership in the kitchen led to his promotion to Executive Sous Chef in early 2023.
A Long Island native, George draws inspiration from his Greek heritage, where his mother’s home-cooked meals sparked his passion for cooking at an early age. His time at The Halyard has deepened his connection to the North Fork’s rich culinary landscape, allowing him to forge meaningful relationships with local farmers and fishmongers. Dedicated to showcasing the region’s finest ingredients, he ensures that every dish highlights the freshest, highest-quality products the North Fork has to offer.
